A Little Help In The Kitchen


  
I don't know about you, but I hate spending a long, hot summer day in the kitchen. I try to grill as much as possible so I can keep my kitchen cool! With the holidays approaching and the temperatures soaring, I tried something new this year. I used my microwave! Country Crock did the rest. I was given an opportunity to try their Mashed Potatoes, Loaded Mashed Potatoes, Macaroni & Cheese, and Cinnamon Apples. Let's start with dessert. The Cinnamon Apples were tender and and flavored wonderfully. It was similar in taste to Logan's favorite restaurant's version. Served over a scoop of vanilla ice cream, this sweet treat can't be beat! We also tried Elbow Macaroni & Cheese. It was my favorite! It was cooked perfectly, not too soft, and it was loaded with creamy cheese. I think this was also Sam's favorite because he kept coming back for more! I love mashed potatoes and I make them for all of our special meals. Whenever I make them, I wash and sometimes peel the potatoes. Sometimes I use several varieties of potatoes. I boil them in salted half water, half chicken stock and then I mash them with cream and butter after draining most of the water, tossing in a few fresh or dried herbs. I wasn't sure if Country Crock's Homestyle Mashed Potatoes would live up to my standards. These potatoes were creamy and they had a slight tangy flavor. They were thick and had a smooth consistency. The potatoes was wonderful and I stirred in a little extra butter and a few herbs to give them more of a homemade look. I wanted to see if Homestyle Mashed Potatoes could pass as my own. They did. Almost. I was very please because normally it takes me almost an hour to make mine. This took...five minutes! The loaded Mashed Potatoes were good, but I liked the Homestyle better. They had a nice flavor! Hormel's Country Crock Side Dishes give you freedom to enjoy your summer and your family get togethers without heating things up in the kitchen!

Manderin Cookie Company: Not Your Grandma's Cookie. They're Better!

For our birthday bash, we received the ultimate cookies! Why were they ultimate? Manderin Cookie Company took what everyone craves and tossed it all together in several cookie varieties. They're unlike anything I've ever tasted and I think the combinations are brilliant! These are not your grandma's cookies. They're better! Way better! Owner Amanda Nokes blended likely and somewhat unlikely combinations of this and that and somehow came out with perfect flavors and textures that leave you wanting more. They're quite addictive! Crazy Love is a crazy blend of sweetened coconut, smooth chunks of rich dark chocolate, and chips of buttery toffee. It's a tamer combination for those looking for a more traditional cookie. Snack Time With Beanie combines kettle chips, Whoppers, Gold Fish, Vanilla Oreos and butterscotch morsels. Yeah, you read that right. This quirky cookie has the potential to be an instant hit! My favorite cookie was the BeeRoo, starring peanut butter, bursts of gooey caramel and chocolate covered pretzels. They were perfect in every way and I'll admit to putting a few aside for later. I couldn't help it! The Max is a rich chocolate cocoa cookie made with big morsels of sweet milk chocolate and white chocolate. It was probably my second favorite. It was full of chips and they were evenly distributed throughout each cookie. Liddy Diddy is full of chocolate covered coffee beans and bits of toffee chips. It's a coffee lover's dream. JJ's Jubilee Oatmeal Raisin cookies are made to perfection and then perfected a touch more with bite size bursts of tart cherry sweetness. Chances are, Manderin Cookie Company has the cookie to alleviate your cravings. Just be sure to order enough. One bite will lead to a new craving and leave you wanting more!

Jekyll Island, Georgia: The Little Things!

 During our recent trip to Jekyll Island, we stayed in a beautiful villa, visited various attractions and had wonderful things to eat. If you're like me, you go on a vacation and try to take it all in. The sights, the sounds. You want to experience the local hot spots and hit the major attractions. I'll take you on a tour of all the attractions in my next post. For this post, let's start with a question. If you visit Jekyll Island and take the road less traveled, what will you find?
Sea creatures. And lots of them! Logan had fun picking up little shells with different creatures living inside. Don't worry, no animals (or children) were harmed in the creation of this post. Walking along the beach we found more shells, crab, and jellyfish. We saw several fish in the shallows and dolphins playing in the waves. They swam close to us, which made Logan a little nervous. I'm not certain that he was convinced they were dolphins!
Sam found a few creatures too. Dozens of furry little caterpillars covered our patio and beyond. Sam and Logan had a lot of fun finding them (it wasn't hard) and counting them. It was a welcome distraction!
Close to the nature center, we found this little crab (pictured below) scurrying around. When Sam gave up trying to catch him, the crab returned to the bank along the saltwater pond. Two nights in a row we were returned to our villa after dinner, only to find a pair of raccoons lurking around in the dark. I think they were looking for treats left out by an unsuspecting guest. Either that, or they were plotting. With raccoons, you never know! They didn't bother us and they kept their distance. One night, after leaving the marina where we took a Sunset Dolphin Cruise, we decided to drive down Riverview Drive. In less than half a mile, we spotted about twenty deer roaming the tidy neighborhoods, eating flowers and yard clippings. We drove slow after we discovered the first, rolling down the windows and searching for them! They seemed to be everywhere and they didn't seem to be afraid of us our our vehicle. One walked within a few feet of us after we stopped along the road for a better look. I think the deer rule the island and they proudly patrol the quiet yards and streets in search of a midnight snack!
Jekyll Island is a bird lover's paradise. Take a walk on one of many nature trails and see what you can find! Don't forget your binoculars! Jekyll Island also has a few alligators that make their home close to the nature center. Fortunately we missed those! I'll tell you about what could have been a near miss with these beasts in my next post! 
If you are looking for a slower paced vacation, look no further. Exploring the island will help you uncover hidden little gems. Trust me, there's plenty to be found. I discovered the perfect spot for a picnic lunch with a view that's hard to beat. It's close to the public boat ramp and it was quiet when we stopped to take this picture.
 If you're staying on Jekyll Island, you'll want to visit the beach for sure. There are several beaches to choose from. St. Andrews Beach and Glory Beach are located along the southern end of the island. Here you will find locals fishing, children splashing, and a few families enjoying picnics. It's calm and peaceful, and well worth the little hike over the dunes.
 On the northern end of the island, you'll find Clam Creek Picnic Area and fishing pier. This was my favorite side of the island. There are several beautiful trails and if you're in the mood, you can go horseback riding. The real draw for me is Driftwood Beach. Here, you will find a spectacular scene and a great photo op.
 The coastline is littered with massive trees, some half buried in the sand. The wind has etched intricate lines into the wood creating unique, one-of-a-kind art. It's breathtakingly beautiful and I'm glad I didn't miss it. The kids enjoyed climbing trees and taking in the views of the ocean. Several locals fished here and a few couples held hands as they walked along the beach.
 Jekyll Island is a great place to visit. Visit ruins, play tennis, or practice your golf swing. Kayak or take a canoe trip! It's all up to you. Enjoy warm southern hospitality on this relaxed little island where the pace is slow and the days are long. Jekyll Island is a charming historic community and they are ready to welcome you and your family. Make plans and get ready for a unique experience!

BUDism #65 - LEAVE NO PIE BEHIND!!! GERBERism #1- ALWAYS ORDER MORE THAN YOU PLANNED!!!


 There are a lot of reasons I like Bud "the Pieman" Royer. His pies are only one of them. First, Bud supports our troops! Sending his delicious Bud's Chocolate Chip Pie would be a morale boost for just about anyone, troops included. If you don't have a soldier in mind, they do, and I couldn't think of a better gift. Another reason I like Bud? He's a lot of fun. One look at his site is all it takes to feel his passion about food and people. You can "hear" a smile in the words he writes, and that's important too. Life is so much better when you love what you do. It's also better when you can eat pie anytime you want it!
For Logan and Sam's birthday, Bud sent us a couple of pies to try. I'm not really a pie lover, and I don't think I've ever reviewed one for that reason. Looking at Bud's Chocolate Chip Pie had me rethinking things one afternoon. Just maybe, I had found a pie that I would like. When I checked out the Royers Round Top Cafe, I also found another pie that looked like it might be a winner. It was! Bud's Butterscotch Chip Pie is a dessert we still talk about.
These pies shipped well and arrived in perfect condition. I heated them before serving and they had that fresh baked cookie taste, still warm from the oven. The Bud's Chocolate Chip Pie was my favorite, but that's because I favor anything with chocolate. I think the Butterscotch Chip Pie would have been my favorite if it had a little chocolate in it! Bud's Chocolate Chip Pie was like an enormous, thick cookie full of chocolate chips and pecans. It was moist and a little gooey, but not so much that it didn't hold it's shape when you cut it. It wasn't so rich that you couldn't sit back and enjoy yourself after polishing off a piece either! It's best served with a scoop of vanilla ice cream. If you ask me, Bud's Pies were made for vanilla ice cream. They compliment each other beautifully! Bud's Butterscotch Chip Pie seemed crunchier, more like a crisper cookie with less of the ooey-gooey stuff inside. Maybe I heated it a little longer than recommended, but I liked the crunch! The butterscotch chips gave this delicious pie a flavor that wowed our guests and made Logan and Sam beg for seconds. Sadly, it was gone! A scoop of vanilla takes this pie from out of this world to out of this galaxy and beyond! If you're lucky enough to live close to Round Top, Texas, check our their Cafe. They offer more than pie on the menu. It looks like the kind of place you write home about. I don't know for sure, but maybe one day I will. Until then, Eat More Pie! Just make sure it's Bud's. I'd hate for you to be disappointed!

Ultimate Stuffed Crust Pizza, And A Giveaway!

Pizza Hut took pizza to another level with their Ultimate Stuffed Crust Pizza! Have you tried it? We took Logan out for Pizza to celebrate his birthday. We ordered 2 Ultimate Stuffed Crust Pizzas loaded with cheese and pepperoni. They were delicious!
 Usually, I order cheese breadsticks along with my pizza. Not this time. We didn't need them! The crust was a real treat and we all ate our pizzas crust first! I usually save the crust for last, and most of the time, I don't finish it. This time around,  I couldn't resist the crust, and that's something I never thought I'd say! Our pizzas were baked to perfection, loaded with cheese and savory toppings. Jekyll Island, Georgia: Where To Eat!

A few weeks ago, we visited Jekyll Island for the first time. Before leaving home, I read reviews of various restaurants in the area so I could take that into consideration when we dined out. When you read a travel related review, understand that not all reviews will be positive. That's a given. Also, negative reviews over six months old shouldn't make or break your decision to try a restaurant, or even a hotel. Usually, after receiving a few negative reviews, changes are made to improve quality and service. Most of the reviews I read were positive and I was looking forward to this dining experience.
Our first night on the island found us at The Driftwood Bistro. This charming little restaurant was located next to the lobby of Villas by the Sea, where we spent our long weekend away. The staff was friendly and attentive, discreetly watching over us to ensure the best possible experience. This was not a compensated meal, but I could have sworn they knew what I was up to. I can't remember the last time I had the perfect dining experience, but we certainly had one here! The prices were great and the food was even better. I ordered the farm raised and corn meal breaded catfish fillets with cheese grits and macaroni and cheese. The fish fillets were crisp on the outside, moist and flaky on the inside. They were seasoned nicely and they arrived on the table still hot! The creamy macaroni and cheese was baked and it was topped with a beautifully browned cheesy crust. We all shared, but not because I wanted to. I couldn't keep my husband, Sam or Logan away! Luckily, there was enough to go around. The cheese grits were creamy, but there was a slight tartness that I didn't really like. Logan thought they were okay, but my husband seemed to really enjoy them. The rolls were soft and warm inside and we all enjoyed them!
Before our trip, I read reviews and found out about The Driftwood Bistro's beer battered fried green tomatoes and the fried okra. The reviews were good, and after hearing about their version of fried okra, I knew my husband would love it! Their whole okra pods are smashed flat and pressed into seasoned corn meal and deep fried crispy. My husband couldn't decide on one item as an appetizer, so he ordered both as side items to accompany his Stuffed Collard Greens. Whole leaf collard greens were stuffed with rice and seasoned ground beef and baked in a rich tomato creole. According to him, it was the best meal he's had in a long time. The fried green tomatoes were a little bland, but everything else was perfectly cooked and seasoned.
 Logan had...Pizza. Pizza Bites to be exact. But this wasn't a microwaved pizza passed off as something more. This pizza was made with fresh bread, delicious sauce, and it had a generous layer of cheese. This kid's meal made me want to sneak a slice off Logan's plate. It smelled amazing! He loved it and polished it off quickly!
 Sam had Chicken Fingers from the child's menu. When his plate arrived, my husband cut the chicken into bite size pieces. We did "sample" it, just to make sure it wasn't too hot. As soon as I tasted it, I grabbed another bite, and then another. It's a good thing The Driftwood Bistro is generous with their portions. I could have eaten all of his chicken fingers! Seriously, they were some of the best I've had. They were juicy and full of flavor. The crust was crisp and it wasn't oily at all!
The Driftwood Bistro scored an A! As we were finishing our meal, the manager (or owner) came over to greet us. He wanted to make sure we enjoyed our meal. After a little friendly banter he was on his way. What a warm welcome we received from this gentleman and all the staff! It was such a pleasant experience that I could see myself coming back and making it my regular spot. I left with a smile. We all did!
During our trip, we were given tickets for a Sunset Dolphin Cruise. While we were waiting to depart, we sat down at a table just outside the gift shop. When approached by a gentleman asking for drink orders, I looked across and noticed we had found Rah Bar. The waiter asked if we were waiting for the boat and then he did something so unusual. He offered complimentary drinks and asked that we consider returning to eat sometime soon! Here's a little more information:

We didn't eat there, but we will in the near future. After leaving our sunset cruise, there was a live band playing and a nice crowd. We all stopped briefly to enjoy the scene, and then we were off!
Fins on the Beach had a lovely setting. It was oceanfront, with a well lit exterior and beautiful landscaped grounds. Walking toward the parking lot was a delight. The sun had already set and the cool breezes were blowing off the sea. I was immediately in the mood for delicious seafood. Walking towards the door, I noticed a great place to sit outside and dine. After going inside, I took note of the light decor that really fit the theme of the restaurant. It was clean and it smelled really good! We were the only ones up front and we waited more than five minutes before we were noticed and seated. After being seated, we ordered drinks. The kids colored activity sheets while we waited. When the drinks arrived, a container of hushpuppies was set on the table. Instantly, we all took one and savored the flavors. These hushpuppies were divine. I wanted to take a box (a very BIG box) of them home! We waited patiently for our dinner to arrive. With the neverending (they kept them coming at our request) hushpuppies, it wasn't hard to do!
We ordered Cannonball Shrimp for starters. We asked for the sauce on the side. Sam doesn't like spicy food that much, and Logan has a hard time eating it sometimes. The shrimp were cooked perfectly and the breading was crisp and flavorful. The shrimp were served over a Caesar Salad, minus the croutons, which was nice because I didn't order a salad with dinner. The lettuce was cool and crisp. You could tell it was fresh!
My husband ordered After The Storm Boat Bounty. Wild Georgia Shrimp, fried oysters, scallops and fish seemed to be a great combination. After tasting the Cannonball Shrimp, we expected this shrimp to be just as good! It wasn't. Don't get me wrong, it wasn't bad, but it went from spectacular to slightly better than average. Maybe a different chef prepared this entree. We were told this was a possibility. Everything tasted different, right down to the batter. The scallops were not real scallops, but they were tasty. Everything else was really good, especially the fish.
I ordered Blackened Mahi Mahi served on a seasoned wooden plan. The presentation was really nice. The blackened seasoning was a little light, almost too light, but it had a great flavor. The mild flavored fish was a little dry, but other than that, it was good. The fries were unevenly cooked. Most were perfect, but I found some needed a little longer in the fryer. Let's get back to those hushpuppies! Did I mention how great they were!
Logan enjoyed Steamed Crab Legs. Actually, we all did. They were cooked perfectly and they had beautiful color. The presentation wowed Logan and the rest of us too. Logan easily cracked the legs open and found moist crabmeat that was so good, he bypassed the butter!
Sam enjoyed his fried shrimp and french fries, and of course, ketchup. Lots and lots of ketchup! After pouring the ketchup, he dived in and ate almost all of his dinner. It looked like a generous portion for a child's shrimp plate and we were treated to an instant "This is good", which he doesn't always say after that first bite.
The waitress here was new, and she seemed to be learning the ropes. She was a little slow refilling drinks and she forgot a few things, but she was better as the evening progressed. She was always friendly and she was always smiling, even though she still seemed a little uncertain. We enjoyed our time dining at Fins. The atmosphere was great and the views were stunning!
Before leaving the island, we found SeaJays, a beautiful restaurant with southern charm. It was nestled beneath the oaks with a breathtaking view of the marina. It seemed like a welcoming place. You could dine inside or on the porch, overlooking the boats. As we entered, we began seeing signs for their Low Country Boil. We started getting our hopes up only to to have them dashed. If you want to eat Low Country Boil, visit them for dinner! We were greeted by a waitress and shown to our table, disappointed that their Low Country Boil wasn't until later that day.
My husband ordered Nachos Carne Supremos. It was good. He ordered sweet tea and was a little disappointed when he had to get up and find a waitress to get a refill. His glass was more than half full of almost completely melted ice. Instead of dumping it, the waitress poured new ice into it and topped it off with tea.  
I ordered Breaded Chicken Tenders that were described as crisp. Unfortunately, they were limp, as if they came straight from the microwave. I know they were not baked or fried. I could only eat one. Thank goodness they came with a bag of chips! Regardless of this experience, I'm betting their Low Country Boil is to die for. It looked that good, in pictures of course. I wouldn't hesitate to give them another shot. Just don't ask me to have chicken tenders!
Logan and Sam had pizza. Not only did it look good, it tasted great! The kids were happy and that made me happy. We had the pleasure of  looking out over the water while we dined and that was a treat! With the meal over costing around $35, not including tip, I was a little disappointed. I don't think I will be back for lunch, but I will definitely be back for dinner.

The Greatest Birthday Tees Anywhere!


If you've been reading my blog then you'll remember Olive & Ollie. Heather is the creative designer and owner, and personally, I think she is the greatest!  Hands down, this is one of my favorite Etsy sites. I discovered Olive & Ollie when I was looking for Sam's first birthday tee. I already had one promised for Logan.
Heather sent an adorable tee and matching bib. It was love at first site! From that point on, I made Heather my exclusive birthday tee creator. She was in, even if I had to pay for it! Last year, Logan and Sam received tees. This year, she did it again.  Once you visit her site, you'll understand. Her appliqued tees and accessories are made to last. My kids still wear last years tees and they still look great! The appliques are still in perfect condition.
 Heather is a genius with needle and thread. I love the way she uses fabric to create her various designs. One of my favorites? Dexter the Dinosaur pictured above! She also creates the sweetest lounge sets for little boys and girls. Here's a hint, they make great pajamas for Christmas morning pictures! This year, she took a Pirate Ship Tee and made it into a birthday tee for Sam! I love how the ship really stands out against the black tee.
Logan received a  Sailboat Tee for his birthday. I think it was the perfect design for him because he loves boats! The cool blue tee makes it the perfect choice for our hot and humid weather outside. I searched for any flaws and they were nonexistent. I even had my mom look. Since she sews, I thought she would be able to spot a flaw if it was there. I didn't expect her to find anything and she didn't! Olive & Ollie always use quality tees and fabrics. She can create anything, at least, I think she can! She takes her time and pours love into each piece, giving each the attention it deserves! Visit her blog and find out about special savings.
